In a large bowl, combine chopped lettuce, onion, tomato and green pepper (however much you want- you can add other veggies). <br />2. In a small bowl, take 1/4 cup firm tofu and crumble it. Stir in 2 tsp spicy mustard. Add to salad bowl. <br />3. Top salad w/ quinoa, a few spoonful's beans and a little feta cheese. <br />4. In a medium pot, on medium heat, add olive oil and chopped/shredded garlic. <br />2. Add can of chickpeas and cook covered for 10 min (lightly stirring every 2-3 minutes). *you will have leftovers for the chickpeas. <br />3. Chop the rest of your ingredients (I used 1/2 avocado for me and 1/2 for Karel)<br />4. Preheat oven to 450 degrees. <br />2. Spray a nonstick baking loaf with non-stick spray (this will make 2 large casseroles so be prepared to use 2 loaf pans). <br />3. Mix together all ingredients in a very large bowl, except topping. <br />4. Place 1/2 mixture into baking pan, or until 3/4th full. <br />5. Sprinkle a little cornmeal on mixture in pan. <br />6. Spread egg mixture (2eggs+milk) over cornmeal and top with a few pinches of sunflower seeds. <br />7. Repeat for the other loaf pan. I made a sardine (canned) casserole for Karel with the other 1/2 of my casserole. <br />8. Add a little water to meet your consistency needs (typically I fill my oatmeal up so that you can still see the top of the oatmeal mixture but it isn't covering the oatmeal mixture). <br />4. Microwave for 2:45-3 min. Keep an eye on it for overflowing. May need to mix around 90 sec. <br />5. Cook pasta in large pot.<br />2. While pasta is cooking, cook veggies in large skillet w/ 1/2 tbsp olive oil on medium heat. Stir occasionally. <br />3. When veggies are soft and slightly golden, add crumbled tofu and egg(s). Mixture together veggies w/ egg and tofu for 2-3 minutes. <br />4. When pasta is finished cooking, remove from large pot and drain. <br />5. Add veggie mixture to large pot. <br />6. Place 1 serving cooked pasta (per person) on veggie mixture (in large pot) and add 1/2 tbsp olive oil and your choice of no salt seasonings (ex. pepper). <br />7. In a bowl, combine tomatillos, poblanos if you are using them, garlic, onion, salt, pepper and cayenne or chili. On a large non-stick pan, cook chopped garlic in the olive oil. Set on medium heat.<br />2. While garlic is cooking for a minute or two, steam broccoli on stove (you can do this in the microwave as well, with a little water in a bowl).<br />3. After garlic starts to turn a little golden brown, add the chopped onion, pepper and sliced mushrooms. Give a toss to coat in olive oil. <br />4. After 7-8 min (or when veggie begin to get soft and a little brown) add sliced tomato and steamed broccoli. <br />5. Cover pan and plate spinach in a large shallow bowl. <br />6. Top with a spoonful of salsa and add a spoonful (large) of the cooked veggies. <br />7.
