If you eat healthy most of the time, you don't have to worry about the rest of the time.

Vegetarian Meat-Loaf

1/4 cup brown rice
1/4 egg noodles (cooked in boiling water)
1/4 cup corn
1/4 cup sliced mushrooms
1/2 cup veggie crumbles
1/2 cup canned tomatoes w/ chilis
1/2 tbsp hot sauce

1. Cook corn, mushrooms, tomatoes, hot sauce and veggie crumbles on non-stick pan, in a little olive oil (1-2 tsp).
2. When veggies are soft, add to cooked rice and noodle mixture. Pour into baking loaf.
3. In a 400-degree pre-heated oven, cook for 20-30 min.
Optional: top w/ mozzarella cheese
