If you eat healthy most of the time, you don't have to worry about the rest of the time.

10-min. stove-top dinner


(all ingredients are per person)
1/2 cup Broccoli (fresh)
1/4 cup Corn (frozen)

1/4 cup dry Quinoa

1/4 container firm Tofu (cubed)
1/4 cup onion (chopped)
1 clove garlic (chopped)
1/2 tbsp olive oil

1. Cook quinoa in pot on stove (follow directions. I used 1/2 cup dry and 1 cup water). Be sure to watch the quinoa so it doesn't spill over the pot.
2. While quinoa is cooking, cook tofu, onion and garlic in olive oil on medium heat. Stir occasionally for about 10 min.
3. While quinoa and tofu/veggies are cooking, steam broccoli and corn in a large pot on the stove (covered on low heat).
