Vegetarian Thanksgiving

Broccoli and Corn Casserole
1/2 container tofu (crumbled)
1 cup broccoli (chopped)
1 cup corn
1/2 cup chopped onions
4 eggs (2 whole, 2 whites)
Splash of skim milk
1 tbsp low fat sour cream
Bread crumbs
Mozzarella cheese
1. Preheat oven to 350 degrees.
2. Spray a glass casserole dish with non stick spray
3. Combine broccoli, corn, onions and tofu in bowl and mix well.
4. Pour broccoli mixture into casserole dish and cover with egg and milk mixture (lightly scrambled).
5. Top with a drizzle of bread crumbs and Mozzarella cheese.
6. Cook for 20-30 min or until cheese begins to brown.




Homemade Stuffing
3 cups baguette (cut into small pieces)
2 cups celery
1 cup onion
Seasonings: rosemary, basil, cumin, pepper
1 tbsp butter
1-2 tbsp olive oil
1. Preheat skillet to medium heat. Add olive oil.
2. Add bread, celery and onion.
3. Cook on medium heat for 10-15 min, stirring occasionally.
4. Add butter and seasonings and mix well.
5. Cook until bread begins to almost toast.



Cranberry Apple Relish
1 large gala apple (chopped)
2 cups fresh cranberries
1 cup water
1/4 cup brown sugar
1 tbsp butter

1. Add apple, cranberries and water to sauce pan and bring to a boil.
2. Turn down heat and cover for 5 minutes.
3. Add sugar and butter, stir lightly. Cover.
4. Cook for 10-12 additional minutes until relish begins to get thick.


Sweet Potatoes w/ walnuts and raisins
2 large sweet potatoes (cooked in stove for about 40 min with the Turkey)
Raisins
Splash of skim milk
Spoonful of low fat plain yogurt
Walnuts
Cinnamon
Nutmeg

1. Mash sweet potatoes (no skin) and add milk and yogurt to help with mashing.
2. Add a handful of raisins and walnuts. Mix well.
3. Top with a sprinkle of cinnamon and nutmeg.

And for dessert.....
BREAD PUDDING!!!

3 cups chopped whole grain fresh bread
4 egg whites
2 tbsp butter (melted)
1/4 cup brown sugar
Raisins
Cinnamon, nutmeg

1. Preheat oven to 325 degrees.
2. Spray a glass baking dish with non stick spray.
3. Place bread in dish and cover with lightly scrambled egg whites. Add about 1 tbsp cinnamon and 1 tsp nutmeg to mixture and give a toss with hands or spatula. Add raisins and toss.
4. Melt butter and brown sugar in microwave for 30 sec. Stir to combine.
5. Pour over bread.
6. Bake for 20-22 minutes or until bread bounces back when you press down.
